Palm kernel oil vs palm oil — what's the difference?
The oil palm tree (Elaeis guineensis) produces two distinct oils from the same fruit bunch. The fleshy orange outer layer (mesocarp) yields red palm oil (zomi) — deep in colour, rich in beta-carotene, with a bold, nutty aroma. The hard white kernel at the centre of the stone yields palm kernel oil — lighter in colour, milder in flavour, and with a very different fatty acid profile.
Palm kernel oil is predominantly saturated fat (around 82%), with high lauric acid content — the same fatty acid that dominates coconut oil. This gives PKO its high smoke point, its solid-to-liquid transition at around 25–27°C, and its exceptional properties for soap-making. Red palm oil and palm kernel oil are not interchangeable — they have different flavour profiles, different nutritional compositions, and different applications.
Palm kernel oil for cooking and frying.
PKO's high smoke point (around 220–230°C) makes it well suited to high-heat frying — deep frying, stir-frying, and high-temperature sautéing — without breaking down or producing excessive smoke. Its mild, neutral flavour means it does not impart a strong palm taste to food, making it a versatile everyday cooking oil.
PKO is widely used across Ghana for both domestic cooking and commercial food processing — in snack production, bakery applications (where its solid-fat properties substitute for shortening), and margarine production. Palm kernel oil has been used as a soap-making base across West Africa for generations. Its high lauric acid content gives the finished soap hardness and excellent lather — properties that neither olive oil nor red palm oil alone can provide. Many traditional West African black soap (alata samina) formulations use palm kernel oil as a key ingredient.
In the modern artisanal soap industry, palm kernel oil is combined with other base oils (often coconut oil or olive oil) using the cold process or hot process saponification methods. The ratio of PKO in the formulation controls the hardness of the final bar — higher PKO gives a harder bar with more aggressive cleansing; lower ratios give a softer bar with gentler lather.

Palm kernel oil for hair and skin care.
The use of palm kernel oil as a hair and skin conditioner is a long-standing practice across West Africa. PKO's lauric acid content allows it to penetrate the hair shaft — unlike larger-molecule oils that sit on the surface — potentially reducing protein loss and improving shine. It is used as a pre-wash treatment, a scalp conditioner, and a general skin moisturiser.
On skin, PKO acts as an emollient — it forms a light occlusive layer that reduces moisture loss without feeling excessively heavy or greasy. It is suitable for use on dry skin and is a traditional ingredient in body butters and lotions across the region.
Food-grade vs cosmetic-grade palm kernel oil.
The distinction between food-grade and cosmetic-grade PKO lies in processing standards and additives. Food-grade PKO must meet Ghana Food and Drugs Authority standards for purity, free fatty acid content, and absence of contaminants — it is safe to consume. Cosmetic-grade PKO is processed to standards relevant for topical use but may not meet food safety requirements.
